Probably the most famous of the sprouts. Mung beans have been used since ancient times in Chinese cooking, not least for being so rich in vitamin B. The sprouts are fresh and crunchy, taste delicious in stir-fry dishes, salads and even in soups. Before eating, briefly blanch the bean sprouts in boiling water or stir-fry.
